Today was just one of those days….you know the kind…the kind where you just aren’t convinced that you are going to be able to make it from sun up to sun down. It started out that way for me anyway – and it’s not even a Monday!
I didn’t sleep real well last night, despite going to bed early (which had me all excited to get a LONG night’s sleep). I was restless, either too hot or too cold – and to top it all off I remember having some really awful dreams. I don’t usually remember them in the morning but I do remember how they made me feel, and last night had me all shook up.
When it comes to lack of sleep – TGFC – Thank Goodness For Coffee – we hung out for a bit, coffee and I – once a barista, always an addict!
It was a late start day, so Lily was home for a few extra hours this morning – but alas, the girls were at each other’s throats. It’s like the old wives’ tale of all bad things happen in threes – Restless Night, Definitely Bad – Bickering Children, No Fun…..so I wasn’t about to wait around for number 3. I said – that’s it, we are taking the dog for a walk and getting some fresh air. It’s hard to say no to this….
We did have an incident with a loosened bike chain but I was bound and determined not to let this day get the best of me!! It all turned around from there. I think the fresh air was just what I needed – I tackled an amazing leg workout today, taught an awesome plyometric HIIT class, and spent even more time outside. Oh and that bike chain? Fixed!! Score – Lily and I got down and dirty, but she rides like a champ again!!
Which brings me to my dinner tonight. When I was in Toronto filming the Lean series for BodyRock.tv, Lisa introduced me to probably the best salad of my life – The Kale Salad at Queen Mother Cafe!! This was my kinda joint…I think I could eat there everyday…even spend the majority of the day there just hanging out. I haven’t been anywhere like it – cozy atmosphere, fresh, delicious food…what more could you ask for?!
That being said, I have been trying to create a dressing similar to the one they serve on their kale salad and I think I have pretty much nailed it. If any of you have been there, have tried the salad, or try this dressing – I would LOVE to hear your thoughts!! If not, try it anyway and let me know just how AWESOME it is 🙂
- ½ cup olive oil
- ¼ cup rice vinegar
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp roasted coriander
- 1½ tsp curry powder
- ½ tsp red curry powder
- ½ tsp salt
- ½ tsp ground black pepper
- Juice of ½ lemon
- Whisk all ingredients together in a small bowl or liquid measuring cup.
- **Serve over a bed of greens topped with grilled chicken and additional toppings of choice**
