I got this awesome cookbook from my sister-in-law a few years ago and recently rediscovered it – The New Moosewood Cookbook by Mollie Katzen. It is compiled of vegetarian recipes for soups, salads, sauces & dips, baked things & sandwiches, entrees, and desserts! Originally published in 1977, the book celebrated cooking that used fresh vegetables, fruit, legumes, and whole grains.
I have kind of been in a food rut lately – in particular, I haven’t really been in the mood for meat. On top of that the birthday goodies and stress eating I feel like I have been doing lately (read: too many nibbles here and there) has my body craving more vegetables!!
Well today, my husband and I met with a friend at a local coffee shop and tried an amazing curry soup…..there was obviously peanut butter in it too and let me just say….IT WAS DELICIOUS!! So delicious that I busted out this amazing cookbook that I found the other day to see if I could find something similar. Guess what?! I did find something that looks like it will be a close match. Life works in mysterious ways sometimes.
Anyway….while I was paging through the cookbook I realized that I was marking SEVERAL recipes that I wanted to try – and that’s where #MoosewoodMarch was born. What better way to snap out of a food rut than to prepare a brand new recipe every day for a month. If you know me, I like a nice little challenge so I am going to try a new recipe every day and share it here – spread the love!
I’m not cutting out anything completely (and I will be trying some of the desserts as well because they sound divine!!) I just want to really focus on trying new things and falling in love with variety while keeping things relatively healthy and balanced.
